200g fresh udon noodles

2 tablespoons chili oil (adjust for spice level)

1 tablespoon soy sauce

1 tablespoon sesame oil

1 clove garlic, minced

1 green onion, sliced (green and white parts separated)

½ cup bok choy, chopped

1 tablespoon toasted sesame seeds

Fresh cilantro leaves for garnish

Salt and pepper to taste

Cook the Udon Noodles: In a large pot of boiling water, add the udon noodles. Cook according to package instructions until they are tender, typically about 3-4 minutes. Once cooked, drain and rinse them under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a mixing bowl, combine the chili oil, soy sauce, sesame oil, and minced garlic. Stir well to create a fragrant sauce.

      Sauté the Vegetables: In a skillet over medium heat, add a splash of oil (optional) and toss in the white parts of the green onion and the chopped bok choy. Sauté for about 1-2 minutes until the bok choy wilts slightly.

        Combine Noodles and Sauce: Add the cooked udon noodles to the skillet with the sautéed vegetables. Pour the prepared sauce over the noodles. Mix everything gently to ensure that the noodles are coated with the sauce and heated through, about 1-2 minutes.
