Ingredients

8 oz spaghetti or fettuccine

2 cups fresh spinach, washed

1 cup heavy cream

1 lemon (zested and juiced)

3 cloves garlic, minced

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Red pepper flakes (optional for a kick)

Fresh basil leaves for garnish

Instructions

Cook Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and drain the rest.

Sauté Spinach: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Add spinach and cook until wilted (about 2-3 minutes).

Make Sauce: Lower the heat and add the heavy cream, lemon zest, and lemon juice to the skillet. Stir well, allowing the mixture to simmer gently for about 3-5 minutes until slightly thickened.

Combine: Add the cooked pasta to the skillet, tossing to coat the spaghetti in the creamy lemon sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.

Add Cheese: Stir in the grated Parmesan cheese and season with salt, pepper, and red pepper flakes if using. Mix well until the cheese is melted and the pasta is evenly coated.

Serve: Plate the pasta and garnish with fresh basil leaves and an extra sprinkle of Parmesan if desired. Enjoy immediately!
