Apple Fritter Bites

2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1 large egg

1/2 cup milk

1 tsp vanilla extract

1/4 cup raisins (optional)

Oil for frying

Powdered sugar (for dusting)

Instructions
 

In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Mix well and set aside.

    In another bowl, whisk together the egg, milk, and vanilla extract until well combined.

      Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.

        Fold in the diced apples and raisins (if using) until evenly distributed.

          Heat about 2 inches of oil in a deep frying pan over medium heat until it reaches 350°F (175°C).

            Using a small cookie scoop or spoon, drop tables of the batter into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown.

              Remove the fritters with a slotted spoon and drain on paper towels.

                While still warm, dust the fritter bites generously with powdered sugar.
