For the Dumplings:

1 cup all-purpose flour

1/2 cup water (plus more if needed)

1/2 teaspoon salt

1/2 pound ground pork (or chicken)

1/4 cup chopped green onions

1 inch ginger, minced

2 cloves garlic, minced

1 teaspoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (adjust for spice level)

For the Soup:

4 cups chicken or vegetable broth

1 tablespoon soy sauce

1 tablespoon gochujang (Korean chili paste)

1 tablespoon fish sauce (optional)

2 cups kale or spinach, roughly chopped

1 carrot, julienned

1 cup mushrooms, sliced (shiitake or button)

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Make the Dumpling Dough:

    - In a mixing bowl, combine the flour and salt. Gradually add the water until the dough begins to come together. If it's too dry, add a little more water. Knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

      Prepare the Filling:

        - In another bowl, mix together the ground pork, green onions, ginger, garlic, soy sauce, sesame oil, and red pepper flakes. Once combined, set aside.

          Form the Dumplings:

            - Roll the rested dough into a long log and cut it into small pieces (about 1 inch). Flatten each piece into a thin round with a rolling pin. Place a small spoonful of the meat mixture in the center of each round. Fold the dough over to create a half-moon shape, pinch the edges to seal tightly. Repeat until all the filling is used.

              Prepare the Soup Base:

                - In a large pot, bring the chicken or vegetable broth to a simmer. Add soy sauce, gochujang, and fish sauce (if using). Stir well.

                  Cook the Dumplings:

                    - Gently place the dumplings into the simmering broth. Allow them to cook for about 4-5 minutes, or until they float to the surface and are cooked through.

                      Add Vegetables:

                        - Once the dumplings are cooked, add the kale (or spinach), carrots, and mushrooms to the pot. Simmer for an additional 3-4 minutes until the vegetables are tender.
