4 large eggs

1 cup whole milk

1 cup all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 cup unsalted butter (melted)

Powdered sugar (for dusting)

Fresh lemon juice (optional)

Fresh berries (such as blueberries and strawberries, for topping)

Instructions
 

Preheat your oven to 425°F (220°C). Place a 10-inch cast-iron skillet or an oven-safe baking dish in the oven to heat.

    In a mixing bowl, whisk together the eggs until frothy. Add in the milk, flour, salt, and vanilla extract, and whisk until smooth and well combined.

      Once the oven is hot, carefully remove the skillet or baking dish and add the melted butter, swirling to coat the bottom and sides.

        Pour the batter into the hot skillet over the melted butter. If you want to add a hint of flavor, you can sprinkle a bit of cinnamon on top.

          Return to the oven and bake for about 20 minutes, or until the pancake is puffed up and golden brown. Avoid opening the oven door during baking, as this may cause the pancake to deflate.

            Once done, remove it from the oven and allow it to cool for a minute. Dust generously with powdered sugar and drizzle fresh lemon juice over the top, if desired.
