Bang Bang Chicken Bowl

Ingredients
  

1 lb boneless, skinless chicken thighs

2 tablespoons cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

2 cups cooked jasmine rice

1 cup cucumber, thinly sliced

1 red bell pepper, julienned

1 carrot, shredded

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Chicken: In a mixing bowl, combine the cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken thighs to the bowl and coat them evenly with the spice mixture.

    Cook the Chicken: Heat a non-stick skillet over medium-high heat and add a splash of cooking oil. Once heated, add the coated chicken thighs and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from heat and let it rest for a couple of minutes before slicing into bite-size pieces.

      Make the Bang Bang Sauce: In a separate bowl, mix together mayonnaise, sweet chili sauce, and sriracha until well combined. Adjust the sriracha amount according to your heat preference.

        Assemble the Bowl: In serving bowls, divide the cooked jasmine rice evenly. Top with sliced chicken, fresh cucumber, red bell pepper, shredded carrot, and avocado.

          Add the Sauce: Drizzle the Bang Bang sauce generously over the chicken and veggies.
