1 lb boneless, skinless chicken breasts

1 cup uncooked jasmine rice

1 cup broccoli florets

1 cup shredded carrots

1/2 cup green onions, sliced

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon rice vinegar

2 tablespoons sesame oil

Salt and pepper to taste

Sesame seeds for garnish

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine rice and 2 cups of water; bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed. Fluff with a fork and set aside.

    Prepare the Chicken: While the rice is cooking, season the chicken breasts with salt and pepper. In a large skillet over medium-high heat, add 1 tablespoon of sesame oil. Cook the chicken for about 6-7 minutes per side, or until golden brown and cooked through. Remove from heat and let rest for 5 minutes before slicing into strips.

      Blanch the Broccoli: In a small saucepan, bring water to a boil. Add the broccoli florets and cook for 2-3 minutes until bright green and tender-crisp. Drain and rinse under cold water to stop the cooking process.

        Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and rice vinegar until well combined. Adjust the spice level by adding more sriracha if desired.

          Assemble the Bowls: In each serving bowl, layer a scoop of jasmine rice, sliced chicken, blanched broccoli, shredded carrots, and green onions. Drizzle generously with the Bang Bang sauce, and sprinkle with sesame seeds for garnish.
