Bang Bang Chicken Bowls

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust for heat)

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup chopped scallions

1 cup sliced cucumber

Fresh cilantro for garnish

Lime wedges for serving

Prep the Chicken: In a bowl, combine garlic powder, paprika, salt, and pepper. Toss the chicken pieces in the spice mix until well coated.

    Breading Station: Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and the last with panko breadcrumbs. Dredge each piece of chicken first in flour, then dip into the eggs, and finally coat with panko breadcrumbs.

      Fry the Chicken: Heat a large skillet over medium-high heat and add enough oil to cover the bottom of the pan. Fry the chicken pieces in batches for about 4-5 minutes per side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

        Make the Bang Bang Sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha. Adjust the heat according to your preference by adding more or less sriracha.

          Assemble the Bowls: Start with a base of cooked jasmine rice in each bowl. Top with a generous serving of crispy chicken, followed by a sprinkle of shredded carrots, chopped scallions, and sliced cucumbers.
