Ingredients

2 slices of sourdough bread

1 cup cooked shredded chicken

1/2 cup BBQ sauce (your favorite brand)

1/2 cup shredded mozzarella cheese

1/4 cup shredded cheddar cheese

1/4 cup finely chopped red onion

2 tablespoons butter

Salt and pepper to taste

Optional: Fresh cilantro or parsley for garnish

Instructions

Prepare the Chicken: In a medium bowl, combine the shredded chicken with BBQ sauce. Mix until the chicken is evenly coated. Add salt and pepper to taste.

Assemble the Sandwich: Lay one slice of sourdough bread on a clean surface or plate. Layer on half of the mozzarella cheese, followed by the BBQ chicken mixture, red onion, the remaining mozzarella, and cheddar cheese. Top with the second slice of sourdough.

Butter the Bread: Spread one tablespoon of butter on the top slice of the sandwich.

Grill the Sandwich: Heat a nonstick skillet over medium heat. Once hot, carefully place the sandwich in the skillet, buttered side down. Cook for about 4-5 minutes or until the bottom slice is golden brown and the cheese begins to melt.

Flip the Sandwich: Once golden, spread the remaining tablespoon of butter on the top slice. Carefully flip the sandwich with a spatula and cook for another 4-5 minutes on the other side until golden brown and the cheese is gooey.

Serve: Remove the sandwich from the skillet and let it rest for a minute. Slice in half, garnish with fresh cilantro or parsley if desired, and serve warm. Enjoy your BBQ Chicken Grilled Cheese!
