BBQ Chicken Quesadilla

Ingredients
  

2 cups cooked chicken, shredded (preferably BBQ-flavored)

1 cup BBQ sauce (your favorite brand)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1 small red onion, thinly sliced

1 jalapeño, sliced (optional for heat)

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Sour cream and guacamole (for serving)

Instructions
 

Prepare the Chicken: In a mixing bowl, combine the shredded chicken with the BBQ sauce, ensuring the chicken is well coated. Set aside.

    Sauté the Onions: In a skillet over medium heat, add the olive oil. Once hot, add the thinly sliced red onion and cook until soft and slightly caramelized, about 3-4 minutes. If using, add the jalapeño slices and sauté for another minute. Remove from heat.

      Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle 1/4 cup of mozzarella cheese over half of the tortilla. Layer with 1/2 cup of the BBQ chicken mixture and some sautéed onions on top. Sprinkle another 1/4 cup of cheddar cheese on top of the chicken. Fold the tortilla in half.

        Cook the Quesadilla: Heat a non-stick skillet over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip the quesadilla and cook the other side for another 3-4 minutes until it's golden and the cheese is melted.

          Repeat: Repeat the assembly and cooking process for the remaining tortillas and filling.

            Serve: Slice each quesadilla into wedges and garnish with fresh chopped cilantro. Serve warm with sour cream and guacamole on the side.
