Ingredients

For the Dumplings:

2 cups all-purpose flour

1 teaspoon salt

1/2 cup boiling water

1 tablespoon vegetable oil

1/2 pound ground chicken (or your preferred protein)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons curry powder

2 tablespoons soy sauce

1 tablespoon fresh cilantro, chopped

Salt and pepper to taste

For the Soup:

6 cups chicken or vegetable broth

1 can (14 oz) coconut milk

2 tablespoons red curry paste

1 medium carrot, thinly sliced

1 bell pepper, thinly sliced

1 cup baby spinach

Juice of 1 lime

Fresh cilantro for garnish

Instructions

Make the Dumplings:

    - In a mixing bowl, combine flour and salt. Gradually add boiling water, stirring with a fork until the mixture forms a shaggy dough.

      - Let it cool slightly, then knead the dough on a floured surface until smooth. Cover and let it rest for 30 minutes.

        Prepare the Filling:

          - In a skillet over medium heat, heat the vegetable oil. Sauté the onion, garlic, and ginger until softened (about 3-4 minutes).

            - Add the ground chicken, curry powder, soy sauce, cilantro, salt, and pepper. Cook until the chicken is no longer pink. Set aside to cool.

              Form the Dumplings:

                - Roll out the rested dough into a thin sheet and cut into 3-inch squares.

                  - Place a spoonful of the filling in the center of each square. Fold the dough over to form a triangle and pinch the edges to seal. Ensure there are no air pockets.

                    Prepare the Soup:

                      - In a large pot, combine chicken or vegetable broth, coconut milk, and red curry paste. Bring to a gentle simmer.

                        - Add the sliced carrots and bell pepper. Cook for about 5-7 minutes until vegetables are tender.

                          Cook the Dumplings:

                            - Gently add the dumplings to the soup, taking care not to overcrowd. Allow them to cook for 8-10 minutes, or until they float to the top.

                              Final Touch:

                                - Stir in the baby spinach and lime juice. Simmer for an additional 1-2 minutes until the spinach is wilted.

                                  Serve:

                                    - Ladle the soup into bowls and garnish with fresh cilantro. Serve hot and enjoy your delicious curry dumpling soup!
