2 chicken breasts, diced

150g pancetta or guanciale, chopped

2 large eggs

100g Pecorino Romano cheese, grated

50g Parmesan cheese, grated

3 cloves garlic, minced

Fresh parsley, chopped, for garnish

Salt and freshly cracked black pepper

2 tablespoons olive oil

Optional: 100ml chicken broth for additional moisture
