3 ripe bananas, mashed

1 cup crushed pineapple, drained

1/2 cup shredded coconut, unsweetened

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 teaspoon cinnamon (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with cooking spray or butter.

    Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add in the mashed bananas, crushed pineapple, eggs, and vanilla extract, mixing well until combined.

      Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and cinnamon (if using).

        Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Do not overmix.
