Black Pepper Chicken

500g boneless chicken breast, thinly sliced

2 tablespoons black pepper (coarsely ground)

4 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 bell pepper (red or green), sliced

1 onion, sliced

2 spring onions (scallions), chopped

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt to taste

Fresh cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine sliced chicken with soy sauce, oyster sauce, sesame oil, and half of the black pepper. Mix well and let marinate for at least 30 minutes for maximum flavor.

    Prepare the Stir-Fry: In a large non-stick skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and ginger; sauté for 30 seconds until fragrant.

      Cook the Chicken: Add the marinated chicken to the skillet and stir-fry for about 5-7 minutes, or until the chicken is cooked through and lightly browned. Make sure to stir constantly to ensure even cooking.

        Add Vegetables: Toss in the sliced onion and bell pepper. Continue to stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

          Thicken the Sauce: Pour in the cornstarch mixture and stir well. This will thicken the sauce and coat the chicken and vegetables. Cook for an additional 2 minutes.

            Season and Serve: Add remaining black pepper and salt to taste, adjusting according to your preference. Remove from heat and garnish with chopped spring onions and cilantro if desired.
