Ingredients
  

2 cups grated carrots

2 cups diced apples (preferably a crisp variety like Granny Smith or Honeycrisp)

1/2 cup raisins or dried cranberries

1/4 cup walnuts or pecans, chopped

1/4 cup plain Greek yogurt

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon lemon juice

1 teaspoon ground cinnamon

Salt and black pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apples. Toss gently to combine.

    Add the raisins and chopped nuts to the bowl and mix well.

      In a separate bowl, whisk together the Greek yogurt, honey (or maple syrup), lemon juice, and ground cinnamon until smooth.

        Pour the dressing over the carrot and apple mixture and toss until all the ingredients are evenly coated.

          Season with salt and black pepper to taste. Adjust sweetness or acidity if needed.

            For best flavor, let the salad chill in the refrigerator for about 30 minutes before serving.

              Garnish with fresh mint leaves if desired, and serve chilled.
