Ingredients
  

6 medium-sized russet potatoes, peeled and diced

8 strips of bacon, chopped

1 small onion, finely chopped

2 cups shredded cheddar cheese

1 cup milk

4 large eggs

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    Cook the bacon in a large skillet over medium heat until crispy. Remove and drain on paper towels, reserving about a tablespoon of bacon grease in the pan.

      Sauté the onion in the reserved bacon grease for about 3-4 minutes until translucent. Set aside.

        Boil the diced potatoes in salted water for about 10 minutes or until just tender. Drain well and let them cool slightly.

          In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, salt, and pepper until well combined.

            In the prepared baking dish, layer the potatoes, followed by the sautéed onions and cooked bacon.

              Pour the egg mixture evenly over the layered ingredients.

                Sprinkle the shredded cheddar cheese on top of the casserole evenly.

                  Bake in the preheated oven for about 35-40 minutes, or until the cheese is bubbly and golden brown, and the center is set.

                    Remove from the oven and let it cool for 5-10 minutes. Garnish with chopped fresh chives before serving.
