Ingredients

For the Burritos:

1 lb ground beef

1 cup shredded cheddar cheese

1 cup cooked rice

1 can (15 oz) black beans, rinsed and drained

1 cup salsa

1 tsp cumin

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

4 large flour tortillas

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

For the Crispy Fries:

2 large russet potatoes

2 tbsp olive oil

1 tsp paprika

1/2 tsp garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Fries:

    - Preheat the oven to 425°F (220°C).

      - Wash and peel the russet potatoes, then cut them into thin strips to resemble fries.

        - In a bowl, toss the potato strips with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.

          - Spread the fries in a single layer on a baking sheet lined with parchment paper.

            - Bake for 25-30 minutes, flipping halfway through, until they are crispy and golden brown. Set aside.

              Make the Beef Filling:

                - In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks (about 5-7 minutes). Drain excess grease.

                  - Add cooked rice, black beans, salsa, cumin, garlic powder, onion powder, salt, and pepper into the skillet with the beef. Stir well to combine and let it simmer for about 5 minutes until heated through.

                    Assemble the Burritos:

                      - Lay out a flour tortilla on a flat surface. Spoon a generous amount of the beef mixture onto the center, and sprinkle with shredded cheddar cheese.

                        - Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to encase the filling fully.

                          - Repeat with the remaining tortillas and filling.

                            Grill the Burritos:

                              - Heat a grill pan or skillet over medium heat. Place the burritos seam-side down and grill for 2-3 minutes on each side until golden and slightly crispy.

                                Serve:

                                  - Once the fries are ready, remove them from the oven and garnish with fresh parsley.

                                    - Serve the cheesy beef burritos with a dollop of sour cream and a sprinkle of fresh cilantro on top, alongside a generous portion of crispy fries.
