9 oz cheese tortellini (fresh or frozen)

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) red enchilada sauce

1 can (10 oz) diced tomatoes with green chiles

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp cumin

1 tsp chili powder

1/2 tsp salt

1/4 tsp black pepper

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef and diced onion. Cook until the beef is browned and the onion is softened, about 5-7 minutes. Make sure to break up the beef as it cooks.

      Add Aromatics: Stir in the minced garlic, cumin, chili powder, salt, and black pepper. Cook for another 1-2 minutes until the garlic is fragrant.
