1 can (15 oz) of white beans (cannellini or navy beans), drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon grated ginger

1 teaspoon cumin powder

1 teaspoon coriander powder

½ teaspoon turmeric powder

½ teaspoon garam masala

½ teaspoon red chili powder (adjust for spice preference)

Salt, to taste

Freshly ground black pepper, to taste

½ cup diced tomatoes (fresh or canned)

¼ cup cream cheese or cheddar cheese (or a mix)

4 slices of whole grain or sourdough bread

Fresh cilantro or parsley, chopped, for garnish

Instructions
 

Prepare the Beans: In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

    Spice it Up: Add cumin, coriander, turmeric, garam masala, red chili powder, salt, and pepper to the pan. Cook for about 2-3 minutes until the spices are nicely toasted.
