Ingredients

2 slices of sourdough bread

1 cup cooked chicken, shredded (rotisserie chicken works well)

1 ripe avocado, mashed

1/2 cup mozzarella cheese, shredded

1/4 cup red onion, thinly sliced

1/4 cup cilantro, chopped

1 tablespoon lime juice

1 tablespoon olive oil

Salt and pepper, to taste

Butter, for spreading on the bread

Instructions

In a mixing bowl, combine the shredded chicken, mashed avocado, red onion, cilantro, lime juice, salt, and pepper. Mix until well combined.

Heat a skillet over medium heat and add a tablespoon of olive oil.

Spread butter on one side of each slice of sourdough bread.

Place one slice of bread in the skillet, butter side down, and spoon half of the chicken-avocado mixture on top.

Sprinkle half of the mozzarella cheese over the mixture, then place the second slice of bread on top, butter side up.

Cook for 3-4 minutes or until the bottom slice is golden brown and crispy. Carefully flip the sandwich using a spatula and cook the other side for an additional 3-4 minutes until golden and the cheese has melted.

Once cooked, remove the sandwich from the skillet and let it cool for a minute before slicing in half.

Serve warm and enjoy your delicious Chicken Avocado Melt Sandwich!
