Chicken Ramen Stir Fry (30 minutes)

2 boneless, skinless chicken breasts, thinly sliced

2 packs of instant ramen noodles (discard seasoning packets)

1 cup of broccoli florets

1 cup of bell peppers, sliced (red and yellow for color)

1 cup of snap peas

3 cloves of garlic, minced

1 inch ginger, grated

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon olive oil

1 tablespoon rice vinegar

1 teaspoon crushed red pepper flakes (optional for heat)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Cook the Ramen: In a large pot of boiling water, cook the ramen noodles according to package instructions, but reduce the cooking time by 1 minute. Drain and set aside.

    Prepare Chicken: In a large skillet or wok, heat olive oil over medium-high heat. Add the sliced chicken and sauté until it’s golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Stir Fry Vegetables: In the same skillet, add the minced garlic and grated ginger, stir-frying for 30 seconds until fragrant. Add the broccoli, bell peppers, and snap peas. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

        Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the cooked ramen noodles, soy sauce, oyster sauce, sesame oil, rice vinegar, and crushed red pepper flakes (if using). Toss everything together using tongs to combine thoroughly and heat through, about 2-3 minutes.

          Serve and Garnish: Divide the chicken ramen stir fry into bowls. Garnish with chopped green onions and a sprinkle of sesame seeds on top. Serve immediately and enjoy!
