Ingredients
  

4 large bell peppers (any color)

1 pound ground chicken sausage (mild or spicy, based on preference)

1 cup cooked quinoa

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh basil for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes. Lightly spray a baking dish with cooking spray and place the peppers upright in the dish.

      In a large skillet over medium heat, add the chopped onion and garlic. Sauté for 2-3 minutes until fragrant and the onion is translucent.

        Add the ground chicken sausage to the skillet, breaking it apart with a spoon. Cook for about 5-7 minutes until browned and cooked through.

          Stir in the diced tomatoes, cooked quinoa, Italian seasoning, smoked paprika, salt, and pepper. Mix well and let it simmer for 2-3 minutes to meld the flavors.

            Remove the skillet from heat and stir in half of the mozzarella cheese.

              Fill each pepper with the chicken sausage and quinoa mixture, pressing it down to pack it in.

                Top each stuffed pepper with the remaining mozzarella cheese.

                  Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                    Remove from the oven, let cool for a few minutes, and garnish with fresh basil before serving.
