Chinese Beef and Broccoli

1 lb (450g) flank steak, thinly sliced against the grain

2 cups broccoli florets

3 tablespoons vegetable oil, divided

3 cloves garlic, minced

1-inch piece ginger, minced

1/4 cup soy sauce (low sodium recommended)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

1 tablespoon honey

1/2 teaspoon black pepper

1/2 cup beef broth

Cooked white rice or steamed jasmine rice, for serving

Sesame seeds and chopped green onions for garnish (optional)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak with soy sauce, oyster sauce, cornstarch, sesame oil, honey, and black pepper. Mix until the beef is well coated. Let it marinate for at least 30 minutes in the refrigerator.

    Prepare the Broccoli: Bring a pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and immediately transfer them to a bowl of ice water to stop cooking. Once cooled, drain again and set aside.

      Stir-Fry the Beef: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated beef in a single layer and allow it to sear without stirring for about 1-2 minutes, then stir-fry for another 2-3 minutes until the beef is cooked through. Remove from the pan and set aside.

        Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, sautéing quickly until fragrant, about 30 seconds.

          Combine Ingredients: Return the cooked beef to the skillet, add the blanched broccoli, and pour in the beef broth. Stir everything together and cook for an additional 2-3 minutes to heat through.
