Chinese Beef and Broccoli

1 lb (450g) beef flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon brown sugar

1/2 teaspoon black pepper

1/4 cup beef broth (or water)

Sesame seeds (for garnish)

Cooked jasmine rice (for serving)

Marinate the Beef: In a medium bowl, combine the sliced beef with soy sauce, oyster sauce, cornstarch, brown sugar, and black pepper. Mix well, cover, and let it marinate for at least 30 minutes to 1 hour in the refrigerator.

    Blanch the Broccoli: Bring a pot of salted water to a boil. Add the broccoli florets and cook for about 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge them into an ice bath to stop cooking, then set aside.

      Stir-fry the Beef: In a large wok or frying pan, heat the vegetable oil over medium-high heat. Add the marinated beef in a single layer and stir-fry for about 2-3 minutes until browned and just cooked through. Remove the beef from the pan and set aside.

        Sauté Aromatics: In the same wok, add minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

          Combine: Return the beef to the wok, add the blanched broccoli, and pour in the beef broth. Stir everything together, cooking for an additional 2-3 minutes until the sauce thickens slightly and the beef is heated through.

            Serve: Garnish with sesame seeds. Serve hot over cooked jasmine rice.
