Cinnamon Sugar French Toast Muffins

Perfectly baked to golden perfection, these mini muffins are made from day-old brioche or challah and soaked in a rich custard mixture. Topped with a sweet cinnamon-brown sugar mix and a drizzle of melted butter, they are a breakfast treat everyone will love. Serve them warm with maple syrup for an extra special touch. Ingredients
  

4 cups of day-old bread, cubed (preferably brioche or challah)

4 large eggs

1 cup milk

1/2 cup heavy cream

1/4 cup granulated sugar

1 tbsp vanilla extract

1 tsp ground cinnamon

1/4 tsp salt

1/2 cup brown sugar

1 tsp ground cinnamon (for topping)

2 tbsp unsalted butter, melted (for topping)

Optional: maple syrup for serving

Instructions
 

Preheat your oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or butter.

    In a large mixing bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, 1 tsp of ground cinnamon, and salt until well combined.

      Stir in the cubed bread gently until all pieces are coated with the egg mixture. Let it sit for about 15 minutes to soak.

        In a separate small bowl, combine the brown sugar and 1 tsp of ground cinnamon.

          Spoon the soaked bread mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the brown sugar-cinnamon mixture on top of each muffin.

            Drizzle the melted butter over the muffins for additional richness.

              Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Allow the muffins to cool in the pan for 5-10 minutes before removing them. Serve warm, optionally drizzled with maple syrup.
