Cowboy Butter Chicken

4 chicken thighs, bone-in and skin-on

1/2 cup unsalted butter, softened

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon chili powder

Salt and pepper to taste

1 lemon, zested and juiced

Fresh lemon wedges, for serving

Fresh herbs for garnish (optional)

Prepare the Cowboy Butter: In a mixing bowl, combine softened butter with minced garlic, parsley, chives, thyme, Worcestershire sauce, Dijon mustard, smoked paprika, onion powder, chili powder, salt, pepper, lemon zest, and lemon juice. Mix until all ingredients are well combined, and set aside.

    Preheat the Oven: Preheat your oven to 425°F (220°C).

      Prep the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.

        Sear the Chicken: In a large oven-safe skillet over medium-high heat, add a tablespoon of oil. Once hot, place the chicken thighs skin-side down in the skillet. Sear for about 5-6 minutes until the skin is golden brown and crispy. Flip the chicken thighs and cook for another 3-4 minutes.

          Apply Cowboy Butter: Remove the skillet from heat. Generously spread half of the prepared Cowboy Butter over the chicken thighs, allowing it to melt into the meat.

            Bake: Transfer the skillet to the preheated oven and bake for approximately 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

              Final Touch: Once done, remove the skillet from the oven and let the chicken rest for 5 minutes. Top with the remaining Cowboy Butter just before serving for extra flavor.
