Cowboy Pasta Salad

Packed with rotini pasta, fresh cherry tomatoes, sweet corn, black beans, colorful bell peppers, and zesty ranch dressing, it's a perfect side or light meal. With just a hint of cumin and chili powder, this salad is sure to please everyone! Chill for 30 minutes for the best taste, and add jalapeños for an extra kick. Ingredients
  

8 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup sweet corn (canned or frozen)

1/2 cup black beans, rinsed and drained

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup cilantro, chopped

1 cup shredded cheddar cheese

1/2 cup ranch dressing

2 tbsp olive oil

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Optional: Jalapeño slices for added heat

Instructions
 

Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    In a large mixing bowl, combine the cooled pasta, cherry tomatoes, sweet corn, black beans, red bell pepper, red onion, and cilantro.

      In a separate small bowl, whisk together the ranch dressing, olive oil, cumin, chili powder, salt, and pepper until well combined.

        Pour the dressing mixture over the pasta salad, and gently toss to combine evenly.

          Add in the shredded cheddar cheese, and toss again to incorporate.

            If desired, mix in jalapeño slices for an extra kick.

              Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
