Creamy Cajun Chicken Pasta

12 oz fettuccine or pasta of your choice

2 boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup sun-dried tomatoes, chopped

1 cup spinach leaves

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Season the Chicken: In a bowl, combine the sliced chicken with the Cajun seasoning, ensuring the chicken is well coated.

      Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and sauté for about 6-7 minutes or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the diced onion and garlic, cooking for 2-3 minutes until they become fragrant. Then, add the red bell pepper and continue to sauté for another 3-4 minutes until softened.

          Create the Sauce: Lower the heat to medium and pour in the heavy cream and chicken broth. Stir well to combine, ensuring to scrape up any brown bits from the pan. Allow the mixture to simmer for about 5 minutes until it thickens slightly.

            Add Other Ingredients: Stir in the sun-dried tomatoes and spinach, cooking until the spinach wilts. Add the cooked chicken back into the skillet, mixing everything together. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

              Combine Pasta and Sauce: Add the cooked fettuccine to the skillet along with the grated Parmesan cheese. Toss everything together until pasta is well coated in the creamy sauce. Season with salt and pepper as needed.

                Serve and Garnish: Plate the creamy Cajun chicken pasta and garnish with chopped fresh parsley. You can add more Parmesan cheese on top if desired.
