2 chicken breasts, cut into bite-sized pieces

8 oz rotini pasta

4 tbsp unsalted butter

5 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup chicken broth

1 cup fresh spinach, chopped

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Rotini: Bring a large pot of salted water to a boil. Add the rotini and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.

      Prepare the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

        Make the Creamy Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.

          Incorporate the Cheese: Add the grated Parmesan cheese to the skillet, stirring constantly until melted and the sauce is creamy.

            Combine Chicken and Spinach: Add the sautéed chicken and chopped spinach to the sauce, cooking for 2-3 minutes until the spinach has wilted.

              Toss with Rotini: Add the cooked rotini to the skillet, mixing well to ensure the pasta is fully coated with the creamy sauce.

                Serve: Remove from heat and garnish with fresh parsley. Serve immediately and enjoy!
