Creamy Garlic Shrimp Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tbsp olive oil

2 tbsp butter

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

    Sauté the Shrimp: In a large skillet over medium-high heat, add 2 tablespoons of olive oil and 2 tablespoons of butter. Once melted and hot, add the shrimp, seasoned with salt, pepper, and red pepper flakes. Sauté for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring to a simmer. Allow to reduce slightly, about 2 minutes.

        Add Cream and Cheese: Lower the heat, then add the heavy cream to the skillet and stir to combine with the broth. Gradually whisk in the Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water to reach desired consistency.

          Combine Pasta and Shrimp: Add the cooked fettuccine and shrimp back to the skillet. Toss everything together to coat the pasta and shrimp in the creamy garlic sauce. Cook for an additional 2-3 minutes until warmed through.

            Garnish and Serve: Remove from heat and garnish with freshly chopped parsley. Serve immediately with extra Parmesan cheese on the side.
