Creamy Mushroom and Asparagus Chicken Penne

12 oz penne pasta

2 tablespoons olive oil

1 pound chicken breast, diced

2 cups asparagus, trimmed and cut into 2-inch pieces

8 oz mushrooms, sliced (button or cremini)

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, boil salted water and cook the penne according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the diced chicken, season with salt and pepper, and sauté until golden and cooked through, about 5-7 minutes. Remove the chicken and set aside.

      Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the asparagus and mushrooms, and sauté for about 5 minutes until they are tender. Stir in the minced garlic and cook for another minute until fragrant.

        Build the Sauce: Pour in the chicken broth and bring to a simmer. Add in the heavy cream and Italian seasoning. Stir well and let it cook for 2-3 minutes until slightly thickened.

          Combine Ingredients: Add the cooked penne pasta and sautéed chicken back into the skillet. Stir to combine everything until the pasta is evenly coated in the creamy sauce. Gradually mix in the grated Parmesan cheese, allowing it to melt and incorporate into the sauce.

            Season and Serve: Taste and adjust seasoning with more salt and pepper if needed. Serve hot, garnished with chopped parsley.
