1 lb (450g) boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

Oil for frying (vegetable or peanut oil works best)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tbsp lime juice

1 tsp honey (optional)

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine the buttermilk, salt, and pepper. Add the chicken thighs, making sure they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

      Prepare the Coating:

        - In a large bowl, mix the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper until well combined.

          Heat the Oil:

            - In a deep frying pan or a large pot, pour enough oil to submerge the chicken pieces (about 2 inches deep) and heat it over medium-high heat until it reaches 350°F (175°C). You can check if it's ready by dropping a small piece of batter into the oil; it should sizzle immediately.

              Coat the Chicken:
