Crispy Bang Bang Salmon Bites (Sweet & Spicy)

1 lb fresh salmon fillet, skin removed and cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Vegetable oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon lime juice

Chopped green onions, for garnish

Sesame seeds, for garnish (optional)

Prepare the Salmon: Pat the salmon bites dry with paper towels. This helps to achieve crispiness. Season them with salt and pepper.

    Set Up Your Breading Station: In one bowl, place the flour; in a second bowl, add the beaten eggs; and in a third bowl, combine panko breadcrumbs, garlic powder, paprika, salt, and pepper.

      Coat the Salmon: Dredge each salmon piece in flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the salmon bites well with the panko mixture, pressing gently so the crumbs adhere.

        Fry the Salmon: In a large frying pan, heat about 1/4 inch of vegetable oil over medium heat until hot (350°F). Carefully place the salmon bites in the oil, cooking in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and place on paper towels to drain excess oil.

          Make the Bang Bang Sauce: In a mixing bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Taste and adjust spiciness if desired.

            Serve: Arrange the crispy salmon bites on a platter, drizzle with Bang Bang sauce, and sprinkle with chopped green onions and sesame seeds if using. Serve immediately with additional sauce for dipping.
