500g (1 lb) beef steak (such as flank or sirloin), thinly sliced

2 tablespoons cornstarch

1 tablespoon all-purpose flour

1 teaspoon baking soda

1 teaspoon soy sauce

1 tablespoon vegetable oil (for marinating)

1/2 cup vegetable oil (for frying)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, thinly sliced

1 medium onion, thinly sliced

1-2 fresh red chillies, sliced (adjust to taste)

1/4 cup sweet chilli sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Beef: In a bowl, combine the thinly sliced beef with cornstarch, flour, baking soda, soy sauce, and 1 tablespoon of vegetable oil. Mix well until the beef is evenly coated. Let it marinate for at least 30 minutes to 1 hour in the refrigerator.

    Heat the Oil: In a deep skillet or wok, heat 1/2 cup of vegetable oil over medium-high heat until hot but not smoking.

      Fry the Beef: Add the marinated beef in small batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes until crispy and golden brown. Remove the beef and let it drain on paper towels.

        Sauté the Vegetables: In the same skillet, remove excess oil, leaving just about 1 tablespoon. Add minced garlic, grated ginger, and sliced onion. Stir-fry for about 2 minutes until fragrant.

          Add Peppers and Chillies: Add the red bell pepper and sliced chillies to the skillet. Stir-fry for another 2-3 minutes until the vegetables are slightly tender but still crisp.

            Combine with Sauces: Pour in the sweet chilli sauce, soy sauce, rice vinegar, and sesame oil. Stir well to combine everything and let it simmer for about 1-2 minutes.

              Incorporate the Beef: Add the crispy fried beef back into the skillet. Toss everything together until the beef is well-coated with the sauce and heated through.

                Serve: Transfer the crispy chilli beef to a serving plate. Garnish with chopped green onions and sprinkle sesame seeds on top for added crunch.
