Ingredients

1 lb fresh salmon fillet, skin removed and cut into bite-sized cubes

1/2 cup all-purpose flour

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon garlic powder

1/4 teaspoon smoked paprika

2 tablespoons vegetable oil (for frying)

1/4 cup honey

2 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon chopped green onions (for garnish)

Sesame seeds (for garnish)

Instructions

Preparation of Salmon Bites: In a medium bowl, combine the flour, salt, pepper, garlic powder, and smoked paprika. Toss the salmon cubes in the flour mixture until evenly coated.

Breading the Salmon: In another bowl, place the breadcrumbs. Take each floured salmon cube and dip it into the breadcrumbs, pressing gently to help the crumbs adhere to the fish. Set the coated salmon bites aside.

Making the Honey Garlic Sauce: In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Heat over medium heat until the mixture begins to simmer. Cook for about 2-3 minutes until slightly thickened, then remove from heat and set aside.

Frying the Salmon Bites: In a large non-stick skillet, heat the vegetable oil over medium-high heat. Once hot, add the salmon bites in a single layer (you may need to do this in batches). Fry for 2-3 minutes on each side until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

Coating with Sauce: In a large serving bowl, gently toss the crispy salmon bites with the honey garlic sauce until well-coated.

Garnishing: Transfer the coated bites to a serving plate, and sprinkle with chopped green onions and sesame seeds for extra flavor and presentation.

Serving: Serve immediately while crispy and warm, with extra honey garlic sauce on the side for dipping if desired.
