Ingredients
  

2 cups fresh strawberries, hulled and sliced

1 large cucumber, thinly sliced

½ red onion, finely chopped

¼ cup fresh mint leaves, chopped

¼ cup feta cheese, crumbled

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Instructions
 

In a large bowl, combine the sliced strawberries, cucumber, and red onion.

    Add the chopped mint leaves and feta cheese to the bowl.

      In a small jar or a bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

        Pour the dressing over the salad and gently toss to combine all the ingredients evenly.

          Allow the salad to sit for about 10 minutes at room temperature for the flavors to meld.

            Serve chilled, and garnish with extra mint leaves if desired.
