1 kg chicken, cut into pieces

1 cup coconut milk

2 medium onions, finely chopped

4 cloves garlic, minced

1 inch ginger, grated

2-3 green chilies, slit lengthwise

2 tablespoons vegetable oil

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon turmeric powder

1 teaspoon garam masala

Salt to taste

Fresh cilantro, chopped (for garnish)

Juice of 1 lemon

Instructions
 

Marinate the Chicken: In a bowl, combine chicken pieces with salt, turmeric powder, and lemon juice. Set aside for at least 30 minutes for the flavors to infuse.

    Sauté Aromatics: In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then, add the chopped onions and sauté until they turn golden brown.

      Add Garlic and Ginger: Stir in the minced garlic, grated ginger, and slit green chilies. Cook for another 2-3 minutes until fragrant.

        Flavor the Chicken: Add the marinated chicken to the pan. Cook over medium heat, stirring occasionally, until the chicken is browned on all sides, about 8-10 minutes.

          Spice it Up: Sprinkle in the coriander powder, garam masala, and additional salt if needed. Mix well to coat the chicken.

            Coconut Milk Bliss: Slowly pour in the coconut milk while stirring. Bring the mixture to a gentle simmer, cover, and let it cook for 20-25 minutes until the chicken is fully cooked and tender.

              Final Touch: Check for seasoning and adjust salt or spices according to taste. If you prefer a thicker sauce, remove the lid and let it simmer for an additional 5 - 10 minutes, allowing it to reduce.

                Garnish and Serve: Once done, garnish with freshly chopped cilantro. Serve hot with rice or chapati for a delicious meal.
