2 large cucumbers, thinly sliced

1 medium carrot, julienned

1 red bell pepper, thinly sliced

3 green onions, chopped

1/4 cup fresh cilantro, roughly chopped

2 tablespoons sesame seeds (toasted if desired)

For the Dressing:

3 tablespoons rice vinegar

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, minced

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional, for heat)

Instructions
 

Prepare the Vegetables: In a large mixing bowl, add the sliced cucumbers, julienned carrots, sliced red bell pepper, chopped green onions, and cilantro. Toss these ingredients gently to combine.

    Make the Dressing: In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), minced ginger, minced garlic, and red pepper flakes (if using) until well combined.
