Ingredients

4 boneless, skinless chicken breasts

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped fresh parsley (for garnish)

Instructions

Preheat the oven to 375°F (190°C).

Prepare the marinade: In a mixing bowl, combine the Dijon mustard, honey, olive oil, minced garlic, apple cider vinegar, thyme, salt, and pepper. Whisk until well blended.

Marinate the chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the chicken, ensuring each piece is evenly coated. Reserve the other half of the marinade for later. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

Bake the chicken: Arrange the marinated chicken breasts in a greased baking dish. Pour the reserved marinade over the top of the chicken.

Cook in the oven: Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is no longer pink in the middle. Baste with the sauce halfway through cooking for extra flavor.

Garnish and serve: Remove from the oven, let it rest for a few minutes, then sprinkle with fresh parsley before serving.
