Easy Chipotle Ranch Grilled Chicken Burrito

Ingredients
  

2 large boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon chipotle chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup ranch dressing

1/4 cup fresh cilantro, chopped

1 cup cooked white rice

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or a Mexican blend)

4 large flour tortillas

Optional toppings: diced tomatoes, sliced avocado, salsa, lime wedges

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, chipotle chili powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts. Grill for 7-8 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove from grill and let it rest for a few minutes before slicing into strips.

      Prepare Chipotle Ranch Sauce: In a small bowl, mix together ranch dressing and additional chipotle chili powder (adjust to taste). Add chopped cilantro and mix until combined. This will serve as both a sauce and a dressing for the burrito.

        Assemble the Burrito: On a large flour tortilla, spread a generous amount of chipotle ranch sauce. Layer the cooked rice, black beans, corn, grilled chicken strips, and shredded cheese.

          Wrap the Burrito: Fold in the sides of the tortilla, then roll it up tightly from the bottom to seal in the filling. Repeat with the remaining tortillas and ingredients.
