Ingredients

1 lb boneless, skinless chicken breasts

1 cup plain Greek yogurt

2 tablespoons chipotle peppers in adobo sauce, minced

1 tablespoon fresh lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup romaine lettuce, chopped

1 cup pico de gallo

1/2 cup black beans, rinsed and drained

1 avocado, sliced

Instructions

Marinate the Chicken: In a bowl, combine Greek yogurt, minced chipotle peppers, lime juice, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breasts to the marinade, ensuring they're well coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for better flavor).

Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

Prepare the Burritos: Lay out the flour tortillas. Evenly distribute the grilled chicken slices, shredded cheddar cheese, chopped lettuce, pico de gallo, black beans, and avocado slices onto each tortilla.

Wrap the Burritos: Fold in the sides of the tortilla and then roll from the bottom up to create a tight burrito.

Optional - Heat the Burritos: For a crispy finish, you can place the wrapped burritos back on the grill for about 2-3 minutes on each side until they are golden and heated through.

Serve: Slice the burritos in half and serve with extra pico de gallo or a side of your favorite salsa for dipping. Enjoy your delicious Easy Chipotle Ranch Grilled Chicken Burrito!
