Ingredients

4 boneless, skinless chicken thighs

1/2 cup unsalted butter, softened

4 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon onion powder

1 teaspoon black pepper

1 teaspoon salt

1 tablespoon Worcestershire sauce

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon lemon juice

Fresh corn on the cob, for serving (optional)

Instructions

Prepare the Cowboy Butter: In a mixing bowl, combine the softened butter, minced garlic, smoked paprika, oregano, thyme, onion powder, black pepper, salt, Worcestershire sauce, and lemon juice. Mix until everything is well incorporated and forms a smooth paste.

Marinate the Chicken: Pat the chicken thighs dry with paper towels, then rub a generous amount of the cowboy butter mixture all over the chicken, ensuring it's well coated. Reserve a small amount of the butter for later use.

Cook the Chicken: In a large skillet over medium-high heat, heat a drizzle of olive oil. Once hot, add the marinated chicken thighs to the skillet. Cook for about 5-7 minutes on each side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Finishing Touches: Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Use the reserved cowboy butter to drizzle over the chicken just before serving.

Garnish and Serve: Sprinkle chopped fresh parsley over the chicken for garnish. Serve with fresh corn on the cob for a true cowboy experience.
