2 medium cucumbers

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini)

½ cup fresh basil leaves, torn

3 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste

Instructions
 

Start by washing the cucumbers and tomatoes thoroughly.

    Slice the cucumbers into thin rounds and place them in a large salad bowl.

      Add the halved cherry tomatoes and mozzarella balls to the bowl.

        Gently toss in the fresh basil leaves.

          In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.

            Drizzle the dressing over the salad and toss gently to combine, being careful not to crush the mozzarella.
