Ingredients

4 medium potatoes, diced

1 cup bell peppers, chopped (mix of red, yellow, green)

1 small onion, chopped

1 cup cooked sausage or bacon, chopped (optional for meat lovers)

4 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup shredded cheese (cheddar or your choice)

Fresh parsley, for garnish

Instructions

Prep the Potatoes: Wash and dice the potatoes into small cubes for quicker cooking.

Cook the Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced potatoes, and season with salt, pepper, garlic powder, and paprika. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy on the edges.

Add the Veggies: Add the chopped onions and bell peppers to the skillet with the potatoes. Stir and cook for an additional 5-7 minutes until the vegetables are tender.

Incorporate Meat: If using sausage or bacon, add it now, stirring to combine with the vegetable mixture. Cook for another 3-5 minutes to heat through.

Cook the Eggs: Using the back of a spatula, create 4 small wells in the hash. Crack an egg into each well. Cover the skillet and cook for about 5-6 minutes or until the eggs are cooked to your desired doneness (sunny side up or yolk firm).

Add the Cheese: Once the eggs are set, sprinkle the shredded cheese over the top and cover again for 1-2 minutes until the cheese is melted.

Garnish and Serve: Remove from heat, and sprinkle with fresh parsley. Serve hot and enjoy your delightful breakfast hash!
