Ingredients

2 cups cooked chicken, shredded or diced

1 cup broccoli florets (fresh or frozen)

1 cup cauliflower florets (fresh or frozen)

1 cup grated cheddar cheese

1 cup cream cheese, softened

1/2 cup chicken broth

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

1/4 cup green onions, chopped (for garnish)

Instructions

Preheat the oven to 350°F (175°C).

Prepare the vegetables: If using fresh broccoli and cauliflower, chop them into bite-sized pieces. If using frozen, ensure they are thawed and drained.

In a large mixing bowl, combine the cream cheese and chicken broth. Whisk until smooth and creamy.

Add the shredded chicken, broccoli, cauliflower, garlic powder, onion powder, paprika, salt, and black pepper into the bowl. Mix everything until well combined.

Gently fold in half of the grated cheddar cheese into the mixture.

Grease a 9x13 inch baking dish with olive oil. Pour the casserole mixture into the dish evenly.

Top the casserole with the remaining cheddar cheese.

Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is golden and melted.

Remove from the oven and allow it to cool for a few minutes. Garnish with chopped green onions before serving.
