Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

Packed with fresh spinach and cheesy goodness, this recipe combines jumbo pasta shells with a creamy ricotta filling and marinara sauce for a comforting meal. 12 large jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1 egg, beaten

2 cups marinara sauce

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Stuff the Shells: Use a spoon to fill each cooked pasta shell with a generous amount of the spinach and ricotta mixture.

          Assemble the Dish: Spread a layer of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells on top of the sauce. Pour the remaining marinara sauce over the shells, ensuring they are well coated.

            Add Cheese Topping: Sprinkle the remaining mozzarella cheese over the top of the shells.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the cheese is bubbly and golden.

                Serve: Let the dish cool for a few minutes, then garnish with fresh basil or parsley if desired. Serve warm and enjoy your delicious, healthy veggie dinner!
