2 boneless, skinless chicken breasts

8 oz penne pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side or until cooked through (internal temperature should reach 165°F). Remove from skillet and let rest.

      Sauté the Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 3-4 minutes until they start to soften. Stir in the baby spinach and cook until wilted.

        Create the Sauce: Pour in the heavy cream and stir well, scraping up any bits from the bottom of the skillet. Add the grated Parmesan cheese and mix until melted and smooth. If the sauce is too thick, gradually add the reserved pasta water until desired consistency is reached.

          Combine Pasta and Chicken: Slice the cooked chicken into strips and add it to the sauce, along with the cooked penne pasta. Toss everything together until well coated with the sauce.
