Fiery Chicken Ramen with Creamy Garlic Sauce

This recipe is packed with marinated chicken thighs, vibrant veggies like baby bok choy and mushrooms, and tender ramen noodles, all simmered in a flavorful broth. Ingredients
  

2 boneless chicken thighs, sliced

2 tablespoons soy sauce

2 tablespoons sriracha sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon ginger, grated

4 cups chicken broth

2 packs of ramen noodles (discard the seasoning packets)

1 cup baby bok choy, chopped

1 cup mushrooms, sliced

2 green onions, chopped

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

1 teaspoon sesame seeds (for garnish)

Creamy Garlic Sauce:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

1 tablespoon sriracha (or to taste)

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken thighs with soy sauce, sriracha, sesame oil, minced garlic, and ginger. Let it marinate for at least 15 minutes to soak up the flavors.

    Prepare the Broth: In a large pot, bring the chicken broth to a simmer over medium heat. Add the marinated chicken and cook for about 5-7 minutes, until fully cooked.

      Add Vegetables & Noodles: Stir in the bok choy and mushrooms, and cook for another 3 minutes. Add the ramen noodles and cook according to package instructions, usually around 3-4 minutes, until tender.

        Thickening the Broth: Stir in the cornstarch mixture and cook for an additional minute to thicken the broth slightly. Season with salt and pepper to taste.

          Make the Creamy Garlic Sauce: In a small bowl, mix the mayonnaise, minced garlic, lemon juice, and sriracha. Season with salt and pepper. Adjust the spice level by adding more sriracha if desired.

            Serve: In bowls, ladle the fiery chicken ramen, garnishing with chopped green onions and sesame seeds. Drizzle the creamy garlic sauce on top.
