3 ripe but firm bananas

1/2 cup all-purpose flour

1/4 cup corn starch

1 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 cup sugar (for coating)

1/2 cup milk

Vegetable oil (for frying)

1/2 cup unsalted butter

1/4 cup brown sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (for sauce)

Prepare the Bananas: Peel the bananas and slice them diagonally into about 1-inch thick pieces.

    Make the Batter: In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and 1/2 teaspoon ground cinnamon. Gradually whisk in the milk until you have a smooth batter.

      Heat the Oil: In a deep frying pan, pour enough vegetable oil to cover the bottom by about 1/2 inch. Heat over medium heat until hot (around 350°F or 175°C).

        Fry the Bananas: Dip each banana slice into the batter, letting any excess drip off. Carefully place the battered bananas into the hot oil. Fry in batches, without overcrowding, for about 2-3 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.

          Prepare the Cinnamon Butter Sauce: In a small saucepan over medium heat, melt the unsalted butter. Add the brown sugar, vanilla extract, and 1/2 teaspoon ground cinnamon.
