Ingredients
  

4 slices of thick sourdough bread

4 tablespoons unsalted butter, softened

2 cloves of garlic, minced

1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

Salt and pepper to taste

Optional: Red pepper flakes for a spicy kick

Prepare Garlic Butter: In a small bowl, combine the softened butter, minced garlic, dried parsley, and a pinch of salt and pepper. Mix until well incorporated.

    Assemble the Sandwich: Spread a generous tablespoon of the garlic butter mixture on one side of each slice of sourdough bread. Flip the slices over and start layering the cheese: on two of the slices (buttered side down), add half of the mozzarella and cheddar cheese. Sprinkle some red pepper flakes if you desire some heat, followed by the remaining cheese, and then top with the other slices of bread, buttered side up.

      Grill the Sandwich: Place a non-stick skillet or griddle over medium heat. Carefully place the assembled sandwich into the pan. Cook for about 3-4 minutes on one side, or until golden brown and crispy.

        Flip and Finish: Gently flip the sandwich using a spatula and cook for an additional 3-4 minutes on the other side until the bread is golden brown and the cheese is melted.

          Serve: Once done, remove the grilled cheese from the pan and let it rest for a minute. Slice in half (diagonally for that perfect presentation!) and serve hot with your favorite marinara or dipping sauce.
